I'm a Dutch cheese in a Swiss style, made from cow's milk and aged at least four weeks. I ripen faster than other Dutch cheeses and have internal holes from the ripening process and a smooth yellow rind. Sometimes I'm waxed like Gouda but with a higher moisture content.
